  • 2 large eggs

  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar (for cheesecake filling)
  • 1 large egg (for cheesecake filling)
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • 1 cup white chocolate chips
  • 1 cup Reese's peanut butter cups (chopped)

Instructions

  1. In a large mixing bowl, cream together your softened butter with both granulated and brown sugars until light and fluffy.
  2. Add in your eggs one at a time, mixing well after each addition, and stir in vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt before slowly combining it with your wet ingredients.
  4. Chill the dough for an hour.
  5. In a medium bowl, beat your softened cream cheese until smooth, then mix in granulated sugar, egg, and vanilla extract until well combined.
  6. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  7. Take about one tablespoon of chilled cookie dough, flatten it into a disk, and place a spoonful of cheesecake filling in the center.
  8. Fold over the edges of the dough to seal it around the filling and roll it into a ball.
  9. Arrange on the prepared baking sheet with about two inches between each.
  10. Bake for about 10-12 minutes or until their edges are lightly golden.
