  • 1/2 block firm tofu
  • 16 jumbo pasta shells (regular or gluten-free)
  • 9 oz frozen spinach
  • 16 oz marinara sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon nutritional yeast
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons Califia Farms Oat Milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Soak cashews in boiling water for 10-15 minutes.
  3. Cook jumbo shells according to package instructions, reducing time by one minute for al dente.
  4. Blend soaked cashews with tofu, lemon juice, nutritional yeast, salt, pepper, and oat milk until smooth.
  5. Stir spinach into the cashew mixture.
  6. Spread half of the marinara sauce in a casserole dish and fill each shell with the filling. Arrange in the dish and top with remaining sauce.
  7. Optionally sprinkle with dairy-free cheese.
  8. Cover with foil and bake for 30 minutes; remove foil for the last 5-10 minutes if using cheese.
