  • 4 cloves garlic
  • 2 large carrots
  • 1 stalk celery
  • 1/3 cup white grape juice
  • 2 cups chopped kale
  • Vegetable or chicken broth
  • Olive oil and seasonings

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the chopped onion until golden.
  2. Add minced garlic, diced celery, and chopped carrots; sauté for about 10 minutes until softened.
  3. Pour in white grape juice and let it cook down for about five minutes.
  4. Add cannellini beans, broth (start with less), tomato paste, and seasonings; bring to a boil then simmer for 15 minutes.
  5. Blend a portion of the soup until smooth for creaminess; mix back into the pot.
  6. Stir in kale and simmer until wilted.
