  • 2 tablespoons sugar
  • 1 cup cold unsalted butter
  • 1/4 cup ice water
  • 1/4 cup cold white grape juice
  • 1 lb sweet potatoes
  • 5 tablespoons softened unsalted butter
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cups evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • whipped cream (for serving)

Instructions

  1. Peel and chop sweet potatoes into chunks; boil until tender (about 20 minutes). Drain and return to pot.
  2. For the pie crust: Mix flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Add ice water and cold white grape juice until dough forms. Chill for 30 minutes.
  3. Blend softened butter, dark brown sugar, eggs, spices, salt, evaporated milk, and vanilla extract with the sweet potatoes until smooth.
  4. Roll out chilled crust; fit into pie pan. Pour filling into crust and brush with an egg wash.
  5. Bake at 350°F for about 90 minutes or until set in center. Cool completely before serving.
