  • 1 whole turkey (fresh)
  • 2 cups chicken or turkey stock
  • 1 cup softened butter
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh sage, stem removed and chopped
  • 2 tablespoons fresh rosemary, stem removed and chopped
  • 1 tablespoon fresh thyme, stem removed and chopped
  • 1 whole lemon (zested)
  • 3 teaspoons sea salt
  • 2 cups dry white grape juice

Instructions

  1. Preheat oven to 300°F.
  2. Prepare roasting pan by adding 2 cups of water.
  3. In a saucepan, mix melted butter with grape juice and stock for basting.
  4. Combine softened butter with herbs, lemon zest, garlic, and salt for the herb rub.
  5. Rub two-thirds of the herb mixture under the skin of the turkey.
  6. Stuff cavity with onions, carrots, and lemon if desired.
  7. Soak cheesecloth in basting liquid and cover turkey snugly.
  8. Roast turkey in the oven while basting every 20-30 minutes.
  9. Cook until thigh registers 180°F; remove cheesecloth for final browning.
  10. Let rest before slicing.
