  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 balls of burrata cheese (about 6 oz each)
  • 1/2 cup toasted walnuts, roughly chopped
  • Fresh parsley (optional, for garnish)
  • 1/2 cup fresh sage leaves
  • 1/4 cup pine nuts (or walnuts)
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and pierce the sweet potatoes with a fork. Rub with olive oil and sprinkle with salt. Bake for about 45 minutes until tender.
  2. To make the sage pesto, combine sage leaves, pine nuts or walnuts, garlic, lemon juice, salt, and pepper in a food processor. Blend while gradually adding olive oil until smooth.
  3. Once baked and cool enough to handle, cut the sweet potatoes open lengthwise and fluff the insides. Add burrata cheese, top with toasted walnuts, and drizzle with sage pesto.
  4. Garnish with fresh parsley if desired and serve warm.
