- 4 pieces of salmon (6 ounces each)
- 3 cups baby spinach
- 5.3 ounces feta cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup jarred roasted red peppers
- 2 Tbsp olive oil (divided)
- Salt, to taste
- Pepper, to taste
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- A pinch of cayenne pepper
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice each salmon piece lengthwise to create pockets but do not cut all the way through.
- Brush salmon with olive oil and season with salt and pepper.
- Sauté spinach with Italian seasoning, paprika, cayenne pepper until wilted (about 2 minutes).
- Remove from heat; mix in chopped roasted red peppers, feta, and Parmesan.
- Fill each salmon pocket with the spinach-feta mixture.
- Bake in the oven for 12-17 minutes or until cooked through.
