  • 4 pieces of salmon (6 ounces each)
  • 3 cups baby spinach
  • 5.3 ounces feta cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup jarred roasted red peppers
  • 2 Tbsp olive oil (divided)
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • A pinch of cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice each salmon piece lengthwise to create pockets but do not cut all the way through.
  3. Brush salmon with olive oil and season with salt and pepper.
  4. Sauté spinach with Italian seasoning, paprika, cayenne pepper until wilted (about 2 minutes).
  5. Remove from heat; mix in chopped roasted red peppers, feta, and Parmesan.
  6. Fill each salmon pocket with the spinach-feta mixture.
  7. Bake in the oven for 12-17 minutes or until cooked through.
