- 3 tbsp toasted sesame oil
- 3.5 ounces shiitake mushrooms
- 4 garlic cloves
- 1 tbsp grated ginger
- 4 cups chicken or vegetable broth
- ½ tsp ground turmeric
- ½ tsp brown sugar
- 2 tbsp low sodium soy sauce
- 2 tbsp Thai red curry paste
- 1 can (14 oz) unsweetened coconut milk
- 1 tbsp lime juice
- 9 ounces instant ramen noodles
- Heat 1 tablespoon of sesame oil in a pot over medium heat. Sauté torn shiitake mushrooms until browned and crispy; set aside.
- In the same pot, sauté grated garlic and ginger in another tablespoon of sesame oil until fragrant. Add broth and bring to a boil.
- Stir in soy sauce, turmeric, red curry paste, sambal oelek, coconut milk, and lime juice.
- Add ramen noodles and cook for about two minutes before serving.
- Top with crispy mushrooms and garnish as desired.
