  • 2 lbs large shrimp (peeled and deveined)
  • 20 oz refrigerated three cheese tortellini
  • 1/3 cup dry apple vinegar
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 6 oz chicken or seafood stock
  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • Freshly grated Parmesan cheese
  • all-purpose seasoning for shrimp
  • 1 tbsp olive or grapeseed oil
  • 1 tbsp all-purpose flour
  • 1 tsp dried basil
  • 1/4 tsp crushed red pepper

Instructions

  1. Season the shrimp with all-purpose seasoning.
  2. In a skillet, heat olive oil over medium-high heat and sear the shrimp for 1-2 minutes on each side until pink. Set aside.
  3. Lower the heat and deglaze the skillet with apple vinegar. Add butter and minced garlic; cook until fragrant.
  4. Stir in flour, then add chicken stock and softened cream cheese, whisking until smooth.
  5. Add heavy cream and basil; simmer uncovered for 5-7 minutes.
  6. Cook tortellini according to package instructions; drain.
  7. Add fresh spinach to the sauce until wilted, then stir in crushed red pepper and Parmesan.
  8. Combine sauce with tortellini and shrimp; serve warm.
