  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked jasmine or white rice
  • 1 large ripe mango, diced
  • 1 large avocado, diced
  • ½ cup red onion, thinly sliced
  • 1 small cucumber, sliced
  • ½ cup edamame, cooked and shelled
  • 2 tbsp olive oil
  • Juice of 1 lime
  • 2 garlic cloves, minced
  • ½ tsp chili flakes, optional
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Pinch of salt

Instructions

  1. Prepare the dressing by whisking together olive oil, lime juice, garlic, honey/maple syrup, Dijon mustard, salt, pepper, and optional chili flakes.
  2. In a skillet over medium heat, cook shrimp seasoned with salt and pepper for about 2-3 minutes per side until pink and opaque.
