- 1 lb shrimp, peeled and deveined
- 2 cups cooked jasmine or white rice
- 1 large ripe mango, diced
- 1 large avocado, diced
- ½ cup red onion, thinly sliced
- 1 small cucumber, sliced
- ½ cup edamame, cooked and shelled
- 2 tbsp olive oil
- Juice of 1 lime
- 2 garlic cloves, minced
- ½ tsp chili flakes, optional
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp honey or maple syrup
- 1 tsp Dijon mustard
- Pinch of salt
- Prepare the dressing by whisking together olive oil, lime juice, garlic, honey/maple syrup, Dijon mustard, salt, pepper, and optional chili flakes.
- In a skillet over medium heat, cook shrimp seasoned with salt and pepper for about 2-3 minutes per side until pink and opaque.
