  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Wash and prepare vegetables: asparagus, red bell pepper, snap peas; mince garlic and ginger.
  3. Mix soy sauce, cornstarch, and water in a small bowl until combined.
  4. Heat vegetable oil in a large skillet over medium-high heat.
  5. Sauté garlic and ginger for about 30 seconds until fragrant.
  6. Add shrimp in a single layer; cook for 2–3 minutes until golden. Flip to cook another minute until pink.
  7. Remove shrimp temporarily; stir-fry asparagus and bell pepper for 2–3 minutes until slightly softened.
  8. Add snap peas; stir-fry for another couple of minutes.
  9. Return shrimp to the pan; add sauce mixture and combine gently.
  10. Cook for another minute until sauce thickens; adjust seasoning if needed.
  11. Serve over cooked rice or noodles.
