- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, cut into 2-inch pieces
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 1 cup snap peas
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
- Cooked rice or noodles, for serving
- Sesame seeds and green onions for garnish (optional)
- Rinse shrimp under cold water; pat dry and season with salt and pepper.
- Prep vegetables: wash asparagus, slice bell pepper, rinse snap peas, mince garlic and ginger.
- In a small bowl, mix soy sauce with cornstarch and water until smooth.
- Heat oil in a skillet over medium-high heat; add garlic and ginger for about 30 seconds.
- Add shrimp in a single layer; cook until pink (about 2-3 minutes per side).
- Toss in asparagus and red bell pepper; stir-fry for another 2-3 minutes.
- Add snap peas; stir-fry for an additional two minutes.
- Pour sauce over everything; stir well to coat all ingredients.
- Cook until the sauce thickens slightly (about another minute).
- Serve immediately over cooked rice or noodles.
