  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup oil (canola or vegetable)
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F. Spread halved cherries on a parchment-lined baking sheet, sprinkle with sugar, and roast for about 10 minutes until soft. Allow to cool.
  2. Lower the oven temperature to 325°F. Prepare an 8×8 baking pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In another bowl, beat sugar, eggs, and egg yolk until light and fluffy. Add melted butter, oil, and vanilla; mix well.
  5. Gently fold dry ingredients into wet mixture until just combined. Stir in half of the roasted cherries and chocolate chips.
  6. Pour into the prepared pan and bake for 40-50 minutes until the edges are set but the center remains slightly underdone.
  7. Cool completely before cutting into squares; serve topped with remaining roasted cherries.
