  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, trimmed and halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 garlic clove, minced
  • 1/4 cup olive oil (for vinaigrette)
  • Optional: 1 tsp honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, combine asparagus and radishes. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  3. Roast for about 20–25 minutes until tender and lightly browned.
  4. While roasting, whisk together whole grain mustard, Dijon mustard, apple cider vinegar, minced garlic, and remaining olive oil until emulsified. Season with salt and pepper.
  5. Arrange roasted vegetables on a platter and drizzle with mustard vinaigrette before serving.
