  • 110 grams coconut oil (or sunflower oil)
  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • ½ teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (as needed)
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175 degrees Celsius and prepare a small springform pan by greasing and dusting it with flour.
  2. In a mixing bowl, beat the eggs and sugar until fluffy. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix until just combined.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Fold this dry mixture into the wet mixture gently until just combined.
  4. Pour batter into the prepared pan and bake for about 25 minutes. Cover loosely with foil and bake for an additional 20 minutes until a skewer comes out with a few moist crumbs.
  5. For the glaze, sift powdered sugar into a bowl and mix in milk and maple syrup until smooth. Pour over cooled kuchen.
