  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (as needed)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. In a mixing bowl, beat the eggs with brown sugar until light and frothy. Stir in coconut oil, pumpkin puree, vanilla extract, and optional maple syrup.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually mix into the wet ingredients until just combined—do not overmix.
  4. Pour the batter into the prepared pan and bake for about 25 minutes. Then cover with foil and bake for an additional 20 minutes. Use a toothpick to check for doneness; it should come out with a few moist crumbs.
  5. While cooling, prepare the glaze by mixing powdered sugar with milk and maple syrup until smooth. Drizzle over the cooled kuchen.
