  • 2 eggs

  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9 x 13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, and spices.
  3. In an electric mixer bowl, beat together butter and pumpkin until mixed; add sugar, eggs, and vanilla until combined.
  4. Gradually alternate adding the flour mixture and milk into the wet ingredients until just mixed.
  5. Prepare the crumb topping by mixing all ingredients in a separate bowl until small crumbs form.
  6. Layer half of the pumpkin batter in the dish, followed by half of the crumbs; repeat with remaining batter and crumbs on top.
