  • 2 double shots of blonde espresso
  • 12 cups ice cubes
  • Cold oat milk (to taste)
  • ¼ cup packed light brown sugar
  • 2 cinnamon sticks or 1 ½ tsp pumpkin pie spice
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 1 tsp vanilla extract
  • ½ tsp maple extract (optional)

Instructions

  1. Prepare the syrup by whisking together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water in a small saucepan. Simmer on low heat for 2-3 minutes until slightly thickened.
  2. Remove from heat and stir in vanilla and maple extracts. Strain if desired.
  3. Transfer syrup to an airtight container and store in the fridge if not using immediately.
  4. In a sealable jar, combine one double shot of espresso with 1-2 tablespoons of syrup and ice cubes. Shake vigorously for about 20-30 seconds.
  5. Pour into a glass without ice cubes, then add fresh ice and top with oat milk. Dust with additional pumpkin pie spice before serving.
