  • 1 (9-inch) single spelt pie crust
  • 1 cup (8 ounces) mascarpone cheese
  • ¼ cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • Pinch of cloves
  • Pinch of coarse kosher salt
  • 1 (15 ounce) can 100% pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your spelt pie crust in a pie dish.
  2. In a large mixing bowl, combine room temperature mascarpone cheese with granulated and brown sugars until smooth. Add three eggs, vanilla extract, spices, and mix well. Gently fold in pumpkin puree.
  3. Pour the filling into the prepared crust and smooth the top. Bake for about 1 hour and 15 minutes until set around the edges but slightly jiggly in the center.
  4. Cool at room temperature before refrigerating for at least two hours. Serve with swirled mascarpone on top.
