  • 2 cups whole milk (or non-dairy alternative)
  • 4 eggs (yolks separated from whites)
  • Pinch of cream of tartar
  • 1 1/2 cups confectioner’s sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C) and line an 8×8 or 9×9 inch baking dish with parchment paper.
  2. Warm the milk until lukewarm; set aside.
  3. Beat egg whites with cream of tartar until stiff peaks form.
  4. Melt butter and let it cool.
  5. In another bowl, beat egg yolks with confectioner’s sugar until pale; add vanilla, cinnamon, pumpkin pie spice, and melted butter.
  6. Mix in flour and pumpkin puree along with a portion of the warm milk.
  7. Gradually incorporate the remaining milk into the mixture.
  8. Gently fold in the beaten egg whites until just combined.
  9. Pour batter into prepared dish and bake for about 60-65 minutes until golden brown.
  10. Cool completely before slicing into squares.
