  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs, room temperature
  • 1¼ cup canned pumpkin puree
  • 2 tsp vanilla extract
  • 4 oz. cream cheese, room temperature
  • 4 tbsp unsalted butter, room temperature
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, cardamom, and salt.
  3. In another bowl, mix together the canola oil, granulated sugar, brown sugar, eggs, pumpkin puree, and vanilla extract until well combined.
  4. Gradually add the wet mixture into the dry ingredients. Stir gently until just combined—be careful not to overmix!
  5. Pour the batter into a greased 9×5-inch loaf pan. Bake in your preheated oven for about 55 minutes or until a toothpick inserted into the center comes out clean.
  6. While your bread cools on a wire rack, beat together the cream cheese and butter until smooth. Add in the vanilla extract and powdered sugar gradually. If it's too thick, add milk one teaspoon at a time until you reach your desired consistency.
  7. Once cooled completely, spread the cream cheese frosting generously over your pumpkin bread.
