  • 1 cup packed brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan over medium heat, melt butter and stir in brown sugar, heavy cream, vanilla extract, and a pinch of salt until smooth.
  3. Arrange pecans in a circular pattern at the bottom of the prepared pan and pour the caramel mixture over them.
  4. In a separate bowl, whisk together flour, baking powder, and salt. In another bowl, cream softened butter with granulated sugar until light and fluffy.
  5. Beat in eggs one at a time followed by vanilla extract. Gradually add dry ingredients alternating with milk.
  6. Pour batter over the pecan topping in the pan and smooth out the surface.
  7. Bake for about 35–40 minutes or until a toothpick comes out clean when inserted into the center.
  8. Allow cooling for 5 minutes before carefully inverting onto a serving plate.
