- 2 lbs red potatoes
- 1 stick butter (1/2 cup)
- 1/3 cup grated Parmesan cheese
- 3 tablespoons herb seasoning (divided)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Nonstick cooking spray
- Preheat the oven to 400°F (200°C) with the butter in a 9×13 baking pan to melt.
- Wash and halve the red potatoes; score the cut sides for better seasoning absorption.
- In a bowl, mix the Parmesan cheese, 2 tablespoons of herb seasoning, salt, and pepper.
- Once the butter is melted, sprinkle half of the seasoning mixture in the pan.
- Place the scored potatoes cut-side down in the pan on top of the seasoning.
- Spray tops with nonstick cooking spray and sprinkle remaining seasoning.
- Bake uncovered for about 40 minutes until tender and golden.
