  • 2 lbs red potatoes
  • 1 stick butter (1/2 cup)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) with the butter in a 9×13 baking pan to melt.
  2. Wash and halve the red potatoes; score the cut sides for better seasoning absorption.
  3. In a bowl, mix the Parmesan cheese, 2 tablespoons of herb seasoning, salt, and pepper.
  4. Once the butter is melted, sprinkle half of the seasoning mixture in the pan.
  5. Place the scored potatoes cut-side down in the pan on top of the seasoning.
  6. Spray tops with nonstick cooking spray and sprinkle remaining seasoning.
  7. Bake uncovered for about 40 minutes until tender and golden.
