  • 1 whole chicken (35 lb)
  • 1 medium onion
  • 2 tablespoons avocado oil
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat your oven to 425ºF (218ºC).
  2. Allow the chicken to rest at room temperature for 30-60 minutes.
  3. Place the whole chicken breast side up in a roasting pan after removing giblets.
  4. Stuff the cavity with halved onion pieces.
  5. In a bowl, mix avocado oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper into a paste.
  6. Coat the chicken generously with the seasoning mixture.
  7. Roast for 70-90 minutes until it reaches an internal temperature of at least 165ºF (74ºC).
  8. Let it rest for 5 minutes before serving.
