Ingredients

  • Boneless, skinless chicken breast
  • Orzo pasta
  • Cajun seasoning
  • Heavy cream
  • Freshly grated Parmesan cheese
  • Bell peppers
  • Spinach
  • Olive oil
  • Minced garlic
  • Chicken broth

Instructions

  1. Cut the chicken breast into bite-sized pieces and season with Cajun seasoning.
  2. In a large pot, heat olive oil over medium heat. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same pot, add bell peppers and sauté for 3-4 minutes. Add minced garlic and cook for another minute.
  4. Stir in orzo and pour in chicken broth. Bring to a boil, then reduce heat and simmer covered for 10-12 minutes until orzo is tender.
  5. Return the chicken to the pot, stir in heavy cream and Parmesan cheese until combined. If too thick, add more broth or cream.
  6. Fold in spinach until wilted. Adjust seasonings if needed.
  7. Serve hot, garnished with extra Parmesan and parsley if desired.
