Ingredients

  • 150 ml extra virgin olive oil
  • ½ tsp chilli flakes
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • 30 g finely grated parmesan cheese (optional)
  • 2 tbsp balsamic vinegar
  • 6 green olives (finely chopped)
  • 6 fresh basil leaves (finely chopped)
  • Sliced warm crusty bread

Instructions

  1. In a medium bowl, combine 150 ml extra virgin olive oil, 2 tbsp balsamic vinegar, ½ tsp chili flakes, 1 tsp salt, ¼ tsp ground black pepper, ½ tsp dried oregano, ½ tsp dried thyme, and (optional) 30 g finely grated parmesan cheese. Mix well and let sit for 10 minutes.
  2. Gently fold in 6 finely chopped green olives and 6 finely chopped fresh basil leaves.
  3. Serve alongside sliced warm crusty bread.
