  • 1 small onion
  • 16 ounces cremini mushrooms
  • 3 cloves garlic
  • ½ cup raw walnuts
  • 1 ¼ cups cooked pearled barley
  • 1 cup cooked pinto or black beans
  • ½ cup panko breadcrumbs
  • Vegan worcestershire sauce

Instructions

  1. Sauté chopped onion and sliced mushrooms in a pan over medium-low heat until moisture evaporates. Add minced garlic and spices.
  2. Preheat oven to 400°F and line a baking sheet with parchment paper.
  3. Pulse walnuts in a food processor until coarse. Add sautéed mixture, barley, beans, nutritional yeast, vegan worcestershire sauce, breadcrumbs, salt, and pepper; blend until combined.
  4. Form the mixture into patties using about ½ cup each.
  5. Bake for 30–35 minutes on one side; flip halfway through for even cooking.
