  • 1 lb boneless skinless chicken breast
  • 2 cups mushrooms (cut in half)
  • 1 clove garlic (minced)
  • 3 sprigs thyme
  • 1 1/2 cups dry white grape juice
  • 1/2 cup seasoned flour
  • 2 tbs butter
  • 2 tbs olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper (or to taste)
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Pound the chicken breast to about 1/4-inch thick and cut into serving-sized pieces.
  2. In a deep skillet over medium heat, melt butter and one tablespoon of olive oil. Dredge each chicken piece in seasoned flour and sauté until golden brown, about five minutes per side.
  3. Remove the chicken and add another tablespoon of olive oil to the pan. Sauté mushrooms and minced garlic until browned.
  4. Deglaze the pan with dry white grape juice, scraping up browned bits, and add thyme.
  5. Return chicken to the skillet, bring to a boil, cover, and simmer for 15-20 minutes.
  6. Remove chicken again, add heavy cream and asiago cheese to the pan, stirring until melted.
  7. Return chicken to the sauce until heated through, garnish with fresh thyme sprigs, and serve.
