  • 1/2 cup sun-dried tomatoes (preferably oil-packed)
  • 23 cloves fresh garlic
  • 1/4 cup extra virgin olive oil
  • Handful of fresh basil
  • Handful of fresh parsley
  • Juice of half a lemon
  • 1/4 cup pine nuts or walnuts (optional)
  • Salt to taste
  • Freshly cracked black pepper to taste

Instructions

  1. Finely chop the sun-dried tomatoes. If they are not oil-packed, soak them in warm water for 10 minutes to soften.
  2. Mince the garlic cloves.
  3. In a medium bowl, mix the chopped tomatoes and minced garlic with olive oil.
  4. Chop and add the fresh basil and parsley to the mixture.
  5. Squeeze in lemon juice and stir well.
  6. If using, coarsely chop the pine nuts or walnuts and fold into the dip.
  7. Season with salt and pepper to taste.
  8. Allow the dip to sit for at least 30 minutes before serving.
