Ingredients

  • Boneless, skinless chicken breasts
  • Medium-sized zucchini
  • Olive oil
  • Fresh garlic
  • Lemon (juice and zest)
  • Dried oregano
  • Dried basil
  • Dried thyme
  • Parmesan or feta cheese
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. Season chicken breasts with salt, pepper, and half of the herbs.
  3. Slice zucchini into rounds or half-moons; toss with olive oil, minced garlic, lemon juice, lemon zest, remaining herbs, salt, and pepper.
  4. Layer seasoned chicken in the center of the baking dish and arrange zucchini around it.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C); add cheese during the last five minutes if desired.
  6. Let it rest for 5-10 minutes before serving.
