  • 1.5 lbs white fish fillets (such as cod or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a large bowl, combine sliced onions, bell peppers, cherry tomatoes, garlic, olives, olive oil, oregano, salt, and pepper. Toss well.
  3. Spread the veggie mixture evenly in the baking dish and place fish fillets on top. Squeeze lemon juice over the fish and sprinkle with zest.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flaky.
  5. Garnish with fresh parsley and serve with lemon wedges.
