  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a bowl, combine sliced onion, bell peppers, cherry tomatoes, garlic, olives, olive oil, oregano, salt, and pepper. Toss to coat evenly.
  3. Spread the vegetable mixture in the baking dish and place fish fillets on top. Squeeze lemon juice over the fish and sprinkle with lemon zest.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork.
  5. Garnish with chopped parsley and serve with lemon wedges.
