  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup melted coconut oil
  • 1/4 teaspoon salt
  • 1 cup freshly squeezed lemon juice
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon turmeric
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, melted coconut oil, and salt until well mixed. Press half into the bottom of the prepared dish.
  3. In another bowl, whisk together lemon juice, granulated sugar, cornstarch, turmeric, and baking powder until smooth. Pour over the crust.
  4. Sprinkle the remaining oat mixture on top of the lemon filling.
  5. Bake for about 38 minutes until golden brown. Let cool completely before slicing.
