  • 1 box (3.4 oz) instant lemon pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 cups powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, mix together yellow cake mix, lemon pudding mix, eggs, vegetable oil, water, lemon juice, and zest on medium speed until smooth (about 2 minutes).
  3. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  4. While baking, prepare the glaze by whisking powdered sugar with lemon juice until smooth.
