Ingredients

  • 2 lbs apples (Gala or Fuji recommended)
  • 10 cups water
  • 2 Tbsp brown sugar
  • 4 inches fresh ginger
  • 2 cinnamon sticks
  • 2 tsp black peppercorns

Instructions

  1. Wash, quarter, and core the apples (leave the skin on).
  2. In a large pot or Instant Pot, combine the quartered apples, sliced ginger, brown sugar, cinnamon sticks, black peppercorns, and water.
  3. For Instant Pot: Cook at high pressure for 18 minutes. For stove: Bring to a boil then simmer covered until apples are soft (about 30 minutes).
  4. Strain the mixture through a fine-mesh sieve into a pitcher and press down gently on the apples to extract maximum flavor.
  5. Let cool before storing in a sealed container in the fridge.
