  • 2 lb thin-sliced beef (or substitute with chicken or tofu)
  • 1 lb Korean sweet potato noodles
  • 3 medium carrots, julienned
  • 1 large white onion, thinly sliced
  • 1/2 bunch green onions, chopped
  • 6 garlic cloves, minced
  • 1/2 lb spinach leaves
  • 4 tbsp sesame oil
  • 1 tbsp olive oil
  • 6 tbsp soy sauce (or tamari for gluten-free)
  • 3 tbsp brown sugar

Instructions

  1. Cook the Noodles: Boil water in a large pot with olive oil. Add sweet potato noodles and cook for about 5-6 minutes until tender but chewy. Drain and set aside.
  2. Sauté the Protein: In a skillet over high heat, cook the sliced beef until browned. Season with half of the soy sauce, sesame oil, and brown sugar. Set aside.
  3. Cook Vegetables: Heat olive oil in another skillet over medium heat. Sauté carrots and onion until softened. Add remaining soy sauce, sesame oil, brown sugar, garlic, and green onions.
  4. Add Spinach: Stir in spinach until wilted, then combine all cooked veggies with sautéed beef.
  5. Toss Together: In a large bowl, mix cooked noodles with the vegetable-beef mixture. Serve warm, garnished with extra green onions if desired.
