  • 2 boneless chicken breasts (or beef loin)
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 2 cups Japanese short-grain rice
  • 2 ½ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¼ cup tonkatsu sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ketchup
  • 1 cup shredded cabbage
  • 2 green onions, sliced
  • Sesame seeds, for garnish
  • Pickled ginger (optional)

Instructions

  1. Rinse and soak the rice in cold water for 30 minutes.
  2. Cook the rice with 2 ½ cups of water; cover and simmer for 15 minutes.
  3. Season the cooked rice with a mixture of rice vinegar, sugar, and salt.
  4. Pound chicken breasts to an even thickness; season with salt and pepper.
  5. Set up a breading station with flour, beaten eggs, and panko.
  6. Dredge chicken in flour, dip in egg, then coat with panko breadcrumbs.
  7. Heat oil in a skillet; fry chicken until golden brown on both sides (about 4-5 minutes each).
  8. Mix tonkatsu sauce, soy sauce, Worcestershire sauce, and ketchup in a bowl.
  9. Assemble bowls with rice topped by katsu, garnished with cabbage and green onions.
