- 3 eggs, whisked
- ½ cup all-purpose flour
- 1½ cups Italian-style panko breadcrumbs
- Salt and freshly ground black pepper, to taste
- Oil, for shallow frying
- 2 cups cherry tomatoes
- 1½ cups fresh basil leaves, sliced into thin strips
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ tsp kosher salt
- ¼ cup dry apple vinegar
- 1 tsp lemon juice
- 1 tsp lemon zest
- 1 burrata, torn into pieces
- 2 tbsp balsamic glaze
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Set up three bowls: one for flour, one for whisked eggs, and one for panko breadcrumbs. Coat each cutlet in flour, then egg, and finally breadcrumbs.
- Heat oil in a skillet over medium heat and fry the cutlets for 2-3 minutes on each side until golden brown.
- In the same skillet, sauté cherry tomatoes until blistered, then add minced garlic and salt. Mix in fresh basil, lemon juice, and zest.
- Serve the crispy chicken topped with the tomato mixture and torn burrata cheese, drizzled with balsamic glaze.
