  • 4 chicken breasts
  • 3 eggs, whisked
  • ½ cup all-purpose flour
  • 1½ cups Italian-style panko breadcrumbs
  • Salt and freshly ground black pepper, to taste
  • Oil, for shallow frying
  • 2 cups cherry tomatoes
  • 1½ cups fresh basil leaves, sliced into thin strips
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp kosher salt
  • ¼ cup dry apple vinegar
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 burrata, torn into pieces
  • 2 tbsp balsamic glaze

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Set up three bowls: one for flour, one for whisked eggs, and one for panko breadcrumbs. Coat each cutlet in flour, then egg, and finally breadcrumbs.
  3. Heat oil in a skillet over medium heat and fry the cutlets for 2-3 minutes on each side until golden brown.
  4. In the same skillet, sauté cherry tomatoes until blistered, then add minced garlic and salt. Mix in fresh basil, lemon juice, and zest.
  5. Serve the crispy chicken topped with the tomato mixture and torn burrata cheese, drizzled with balsamic glaze.
