2 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 cup fresh cranberries
1/4 cup honey
1/4 cup orange juice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon black pepper
4 ounces brie cheese, rind removed and cut into small pieces
1/4 cup chopped fresh parsley
1/2 cup panko breadcrumbs
1 tablespoon butter, melted
Instructions
Preheat your oven to 375°F (190°C).
In a medium saucepan, heat olive oil over medium heat. Add cranberries and cook until they soften (about 5 minutes). Stir in honey, orange juice, cinnamon, ginger, salt, and pepper; cook until thickened.
Let the filling cool slightly. Cut pockets into each chicken breast and stuff them with brie pieces and cooled cranberry mixture. Secure with toothpicks.
Sear stuffed chicken in an oven-safe skillet for 2-3 minutes on each side until golden brown.
Top with panko breadcrumbs mixed with melted butter and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before serving.
