  • 1/2 cup honey
  • 1/2 cup butter, softened
  • 1/2 cup sugar

  • 1 cup diced peaches (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together butter, sugar, and honey until light and fluffy.
  4. Beat in eggs one at a time followed by vanilla extract.
  5. Alternate adding dry ingredients and milk into the mixture until just combined.
  6. Gently fold in diced peaches.
  7. Divide batter into cupcake liners about two-thirds full.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Allow cooling before frosting.
  10. In another bowl, beat together softened cream cheese and butter until smooth.
  11. Mix in honey and vanilla extract next.
  12. Gradually add powdered sugar while beating until fluffy.
  13. Frost each cupcake generously with cream cheese frosting.
