  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • optional: mixed vegetables (like bell peppers or broccoli)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, sear each thigh for 3–4 minutes per side until golden brown. Remove from pan.
  3. Mix BBQ sauce and honey in a bowl; set aside.
  4. Toast rice in the same skillet for 1–2 minutes while stirring.
  5. Add chicken broth and half of the sauce mixture to the rice; stir well.
  6. Return chicken to skillet and pour remaining sauce over it. Cover and simmer for 15 minutes.
  7. If using mixed vegetables, add them after 15 minutes and cook for another 5 minutes until tender.
