  • 1 lb ground turkey sausage (or plant-based sausage)
  • 2 cups milk (try Fairlife for extra protein)
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together pancake mix, milk, eggs, and maple syrup until smooth.
  3. Gently fold in cooked turkey sausage and shredded cheese until just combined.
  4. Spray a mini muffin tin with cooking spray and fill each cup about ¾ full with batter.
  5. Bake for approximately 15 minutes or until muffins are golden brown and firm to touch.
  6. Allow to cool slightly before removing from the tin.
