- 1 lb ground turkey sausage (or plant-based sausage)
- 2 cups milk (try Fairlife for extra protein)
- 2 eggs
- ¼ cup maple syrup
- 1 cup shredded cheese (cheddar or mozzarella)
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together pancake mix, milk, eggs, and maple syrup until smooth.
- Gently fold in cooked turkey sausage and shredded cheese until just combined.
- Spray a mini muffin tin with cooking spray and fill each cup about ¾ full with batter.
