Ingredients

  • 1 tbsp butter
  • 1 leek, sliced
  • 2 carrots, cut into large pieces
  • 2 stalks celery, diced
  • 2 cloves garlic, pressed
  • 250g cooked turkey or chicken
  • 2 large potatoes, cut into large pieces
  • 1 litre chicken stock
  • Fresh thyme leaves (or dried) and parsley for garnish
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven over medium heat, melt the butter. Cook the turkey for about 5 minutes until warmed through. Drain excess fat but leave some for flavor.
  2. Add leeks, carrots, celery, and thyme to the pot. Sauté for about five minutes until softened. Add garlic towards the end.
  3. Stir in flour then gradually add chicken stock while scraping any bits from the bottom. Bring to a boil and season with salt and pepper.
  4. Add potatoes, turkey, and bay leaves; mix well.
  5. Cover and bake in a preheated oven at 180C/350F for about 45 minutes until everything is tender.
  6. If desired, stir in cream before serving. Garnish with parsley.
