  • ¼ cup diced red onion
  • 3 minced garlic cloves
  • ¼ cup finely chopped sun-dried tomatoes
  • 1 cup loosely packed chopped baby spinach
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons dried oregano
  • Kosher salt and black pepper to taste
  • Extra virgin olive oil

Instructions

  1. In a medium bowl, combine ground chicken, red onion, garlic, sun-dried tomatoes, spinach, dill, oregano, salt, and pepper. Mix gently until just combined and form into four patties.
  2. Heat olive oil in a large skillet over medium heat. Cook patties for about 5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  3. Serve with butter lettuce, tzatziki sauce, crumbled feta cheese, sliced onion, tomato, and avocado.
