  • 2 tablespoons sugar (for coffee dip)
  • Cocoa powder (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a mixing bowl, whisk eggs and sugar until light and fluffy.
  3. Fold in flour and salt gently until combined.
  4. Spread batter evenly in the prepared pan and bake for 12-15 minutes. Check with a toothpick for doneness.
  5. Cool briefly, then invert onto a powdered sugar-dusted kitchen towel.
  6. Whip mascarpone, heavy cream, sugar, and vanilla until soft peaks form.
  7. Brew espresso; mix with sugar in a shallow dish.
  8. Trim edges of cooled cake; roll it up using the towel, then unroll gently.
  9. Brush inside with coffee dip; spread mascarpone filling evenly.
  10. Roll back up without the towel; place seam-side down on a platter.
  11. Frost with remaining mascarpone filling; create bark patterns if desired.
  12. Chill for at least four hours or overnight before serving.
  13. Dust with cocoa powder and garnish with shavings or berries.
