  • 24 ounces full-fat cream cheese
  • 1 cup brown sugar (divided)
  • 2 teaspoons ground ginger
  • 3 large eggs
  • 1/4 cup molasses
  • 2/3 cup sour cream
  • 1/3 cup unsalted butter
  • 2 tablespoons brown sugar
  • 6 tablespoons unsalted butter (melted)
  • 1/2 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • 1/2 cup whipping cream or heavy cream
  • 1/2 teaspoon salt
  • 1/2 cup whipping cream
  • 2 teaspoons powdered sugar

Instructions

  1. Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a bowl, mix gingersnap crumbs with 2 tablespoons brown sugar and melted butter; press into the bottom of the pan.
  3. In another bowl, beat cream cheese and remaining sugars until smooth. Add spices, molasses, sour cream, and vanilla; mix until combined. Gradually add eggs while mixing gently.
  4. Pour filling over crust and bake in a water bath for about 60 minutes until slightly jiggly in the center.
  5. Cool in the oven with the door ajar for an hour, then refrigerate for at least four hours before serving.
