  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the Pâte Sucrée dough, cut into portions, and press into tartlet pans. Freeze for 15-30 minutes.
  2. Preheat oven to 375°F. Bake the frozen shells lined with parchment paper and weights for 10-15 minutes until golden.
  3. For the strawberry jam, simmer chopped strawberries with sugar until thickened, about 20 minutes.
  4. Prepare the pastry cream by heating sweetened condensed milk, whole milk, and heavy cream until simmering. Whisk egg yolks with cornstarch; temper and thicken the mixture over heat.
