  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté chopped onion until soft, about 5 minutes.
  2. Add ground turkey and cook until browned, breaking it apart with a spatula.
  3. Stir in tomato paste, chili powder, garlic powder, cumin, and cayenne pepper.
  4. Mix in drained kidney beans and Rotel tomatoes with their juices. Add chicken broth and bring to a gentle boil.
  5. Reduce heat to simmer for 15-20 minutes to meld flavors.
  6. Season with salt and pepper to taste before serving.
