  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Ground cinnamon
  • Salt
  • Milk (or plant-based milk)
  • Vegetable oil (or melted coconut oil)
  • Vanilla extract
  • Eggs (or flax eggs)
  • Brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt.
  3. In another bowl, combine milk, vegetable oil, vanilla extract, and eggs (or flax eggs). Mix until well combined.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined—don’t overmix!
  5. In a small bowl, mix brown sugar with additional ground cinnamon for the swirl.
  6. Layer half of the batter in the prepared pan, sprinkle half of the swirl mixture on top, then add remaining batter and finish with the rest of the swirl mixture. Use a knife to create swirls.
  7. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  8. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
