  • Bell Peppers (red, yellow, or green)
  • Lean Ground Beef
  • Long-grain Rice
  • Tomato Sauce or Crushed Tomatoes
  • Fresh Parsley
  • Oregano
  • Garlic Powder
  • Onion (finely chopped)
  • Mozzarella Cheese
  • Parmesan Cheese
  • Olive Oil
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. Cook rice according to package instructions until al dente.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add ground beef and cook until browned. Season with salt, pepper, garlic powder, and oregano.
  4. Combine the cooked rice with half of the tomato sauce in a bowl, then mix in the beef mixture.
  5. Stuff each pepper tightly with the filling and place them upright in a baking dish.
  6. Pour remaining tomato sauce over the stuffed peppers and top with shredded cheese.
  7. Cover with foil and bake for 30 minutes; uncover and bake for an additional 15 minutes until cheese is golden brown.
  8. Let cool for a few minutes before serving, garnished with fresh parsley.
